Iberico Ham Fermín is a ham famous all over the world for its quality, properties and exquisite taste. It is one of the treasures of the Spanish cuisine, which can be accessed now here in the U.S. Iberico Ham Fermín produced in La Alberca, Salamanca, Spain; is obtained from the purest black Iberian pigs. The meat from Iberico Ham Fermín is rich in unsaturated fatty acids, is a sound choice to please the palate.

Iberico Ham Fermín is obtained from the hind limb of the black Iberian pigs. Selected from their own characteristics that demonstrate the purity of the breed, these pigs are fed on high quality grain in an extensive and free breeding regime. The quality of Iberico Ham Fermín is the result of the perfect combination of factors like purity of breed, breeding system, food and a healing and extending process that last up to 24 months. This ham has a texture, aroma and flavor that make it unique to the palate.

There are differences between Iberico Ham Fermín and the Iberico Ham de Bellota Fermín, given by the process of breeding and feeding of pigs, even though the quality of the animal is the same, feeding makes the difference in taste.

The elaboration process of Iberico Ham Fermín is slow and laborious; it can last up to 24 months and is carried out in five stages or phases like the selection and raw material receiving, salting and washing, settling, drying or warehouse, maturation and aging. During this process is very important the role of The ¨Maestro Jamonero¨ ,he controls the duration of each stage taking into account the characteristics of each piece and following an ancient tradition in order to get a quality product, unique in the market.

Ingredients: Iberian black pork, salt, seasoning (sugar, sodium citrate, potassium nitrate, sodium nitrate). Does not contain gluten.
