Conservation Tips for the Serrano Ham Campofrío

To keep a Serrano Ham Campofrío with bone it is recommended to store it in a dry, ventilated place at room temperature, away from direct light. If you will immediately consume the ham, you must make the first cut and cover the cut area with a piece of bacon from the bark.

This prevents dryness. Later on you should cover the piece with a porous dishcloth to prevent the ham from sweating and avoid its salts to concentrate. Prior to the cutting, the Serrano Ham Campofrío should be placed correctly on a cutting board with the hoof up. To begin the cut, a slight swing of the ham knife should be made without much pressure. The thickness of the slices should be as thin as possible, making the cut from top to bottom and covering the entire width of the Serrano Ham.

To taste this exquisite Serrano Ham Campofrío, the slices would be placed on a plate to cover it at all, not mixing with each other so they do not lose their texture. When cutting thin slices, it must be mixed with the bacon. This merger provides a full flavor and a shiny appearance.

In addition, we must dispense with eating it cold because it could lose taste, so avoid placing it in the refrigerator. Among the tools used for cutting the Serrano Ham Campofrío are included: the carving knife of long and narrow blade, a wide knife to remove the bark of the ham, and a short, sharp knife to clean the piece. Once we begin to make the cuts avoid placing the other hand in front of the knife.

It is a genuine product of the Spanish gastronomy. Its pinkish flesh with white veins of fat, is of warm and soft flavor. A symbol of the Spanish culture, Serrano Ham Campofrío is considered one of the culinary gems of the Iberian Peninsula.

The curing and maturation of the Serrano Ham Campofrío takes between 12 and 14 months and is made using high technology in favorable environmental conditions. The Serrano Ham Campofrío has great nutritional properties because it contains unsaturated fatty acids and is a rich source of vitamins and minerals, with proteins of high value. The Serrano Ham Campofrío is a natural source of sodium and contains oleic acid, which helps to improve the levels of harmful cholesterol in man. That makes it a particularly recommended food for any situation and at any time of the year.

Something to keep in mind are the small white dots that can be found inside the meat of the ham, called thyroxines. The presence of these crystallizations in the Serrano Ham Campofrío can be a sign of optimal curing and maturation; commonplace that shows that the product has been cured properly.
